1. What is "keto" ice cream? I see it everywhere in the market now but I don't know what's the difference between it and regular ice cream.
For the most part, it's a marketing scheme but there are differences.
As crazy as this is going to sound, "keto" ice cream simply means real ice cream. It's the way ice cream had always been made before highly processed/fat free versions overtook the market. "Keto" ice cream is made from cream, rather than the standard reduced fat or fat free milk used in other ice creams which effect their texture. In order to keep the carbohydrate count down, "keto" ice cream usually uses stevia or sugar alcohols instead of sugar. These alternative sugars do not interfere in the texture or taste of the ice cream.
"Keto" ice cream usually does not contain any grain based fillers. This is not only done to keep the carbohydrate count low but because it's made from full fat cream, so there is no need to add anything to improve the texture. You should always check the ingredients though as not all "keto" ice cream is minimally processed and ingredients will vary based on flavor variety. Remember "keto" is not a set of ingredients that can or cannot be had. It is simply a macronutrient composition of very low to no carbohydrate and full fat instead of low or no fat. This means that if the "keto" ice cream has processed ingredients or grains for texture, it will still be "keto" as long as the ice cream retains a "keto" macronutrient composition.
The ridiculous thing about all of this is that they are using the name of a "fad" diet to describe something that has been around since the Tang Dynasty (618 – 907 AD). That's how absurd our food has become. Because they wanted to concoct ice cream that was reduced in fat or fat free, the real thing is now considered something special and out of the ordinary. So much so that it has to be labeled differently.
Ice cream is a very high fat food. Period. It is also quite high in carbs when real sugar is used. That's how it has always been and how it should have remained because when you try to alter it, it becomes a highly processed item filled with added refined ingredients that should not be there. After all, they have to add all this extra crap to it just to try and make it taste and feel like the real thing but we all know that "there's nothing like the real thing, baby". "Keto" ice cream is the real thing, minus the sugar of course.
