Ingredients:
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 bay leaf
- 1 1/2 lbs ground beef
- 1 15 1/2 ounce can tomatoes, diced
- 1 tbsp tomato paste
- 1/4 cup beef stock
- 1 cauliflower, cooked
- 2 tbsp butter
- 1/4 cup cream
- 1 cup Cheddar cheese, grated, divided
- Salt and pepper to taste
- Preheat oven to 350 F.
- Sauté garlic, onion, carrot, celery and bay leaf until soft.
- Add meat and cook until brown.
- Stir in tomatoes, tomato paste and beef stock.
- Cover and cook for 20 mins.
- Blend cooked cauliflower in a food processor with butter, cream and half of the cheese.
- Scatter beef into a baking dish and spread cauliflower mixture over it.
- Mark surface with fork.
- Scatter remaining cheese on top.
- Bake for 30 minutes.
