Ingredients:
- 2 boneless, chicken breasts, pounded flat
- 1 tbsp avocado oil
- 2 tbsp raw almond butter
- 1 tbsp fresh lemon juice
- 2 tsp fresh thyme, chopped
- 1 garlic clove, minced
- 1/2 cup slivered raw almonds
- Salt and pepper to taste
- Preheat oven to 350 F.
- Grease a baking sheet with butter.
- In a small bowl, stir together the almond butter, olive oil, lemon juice, thyme and garlic until well mixed.
- Transfer the pounded chicken breasts to the baking sheet and season with salt and pepper.
- Spread the almond butter mixture over the meat.
- Top the chicken with slivered almonds and bake in the preheated oven for 30 minutes or until cooked through.
