Welcome

My name is Gina and I would like to welcome you to my blog!

On this blog, I not only share the dietary and lifestyle approach which reversed my metabolic disease and achieved my weight loss, but I also debunk many misconceptions surrounding obesity and its treatment.

I am 5'5" and was weighing 300 lbs., at my heaviest. I lost a total of 180 lbs. I went through several phases of low carbohydrate dieting, until I found what worked best and that is what I share on this blog. Once on a carbohydrate restricted diet, along with intermittent fasting, I dropped all of the weight in a little over two years time.

My weight loss was achieved without any kind of surgery, bariatric or cosmetic. I also did not take any weight loss medications or supplements. I did not use any weight loss program. This weight loss was solely the result of a very low carbohydrate, whole foods based diet, along with daily intermittent fasting and exercise.

I allow discussions in the comments section of each post, but be advised that any inappropriate or off-topic comment will not be approved.

There are years worth of content on this blog, so I suggest you use Labels to easily find the information you are looking for. If what you are looking for is not under Labels, enter it into the Search Bar.

Ham and Cheese Omelet

I try to stay away from processed meats like ham and other types of cold cuts, because it is extremely difficult to find them of good quality. These types of "meats" usually have added sugars in them. No matter how wonderful the package claims the item to be, if it has added sugar, then the label of "organic" or "natural" becomes futile.

For this reason, I try to find these products without any added sugar or, at most, 2% or less sugar. Some believe that if the item is 2% or less sugar, the natural fermenting of the product will reduce that 2% to even less. I wouldn't count on it. People believe all kinds of things, but at the end of the day, you have to make your decisions based on facts and the fact is that the product is 2% sugar. Being aware of this will allow you to make sure you do not purchase these items often. They shouldn't be staples in your kitchen, but optional ingredients that are available for certain rare recipes.

This ham omelet is one of those rare dishes that I hadn't had in years. I like to add the ham slices, with the cheese, between the eggs, but you can dice up your ham and add the cheese over the eggs. There are many ways to make this simple recipe, so change it up to your preference.

I like it topped with salsa. You can also top it with sour cream.
